What a glorious time of year! The berries are in such abundance. I sell quite a few gallons of berries but I also put back several gallons in the freezer so I'll have them over the year for making jams and other scrumptious desserts. The strawberries are beginning to wane a little but I do still have them. Currently they are overlapping with the raspberries. (Such a luxury!) 😋
This week I came up with a pie recipe incorporating both fruit's. I already make a strawberry/ raspberry jam. Why not make a pie too? I used a basic fresh strawberry pie recipe but I used 1/2 of the strawberries required and the other 1/2 I used raspberries. It was super easy and quick to make.... again, my kind of recipe. 😏 Give it a try! You won't be disappointed.
Fresh Strawberry and Raspberry Pie
9 inch pie crust
2 Tablespoons Cornstarch
3/4 cup Sugar
1 cup water
3 oz Strawberry Jello package
2 cups fresh strawberries
2 cups fresh raspberries
Whip cream to dollop
Bake pie crust according to directions. In a saucepan combine water, sugar and cornstarch. Bring to a boil and whisk until it begins to thicken, about 2 minutes. Remove from heat. Stir in jello. Allow to cool for 15 minutes. While the mixture is cooling, combine the raspberries and strawberries ( make sure the strawberries are cut into raspberry size pieces.) Pour the fruit into the baked pie shell. Pour the liquid mixture over the berries and allow it to chill for 3 hours. Dollop with whip cream if desired. Enjoy!
